Amaranth was called the “food of the gods” during the Incas; It is a cereal crop with small grains that are consumed and oil is produced. Amaranth oil is a relatively new product and is still being studied by many researchers to prove its true importance, due to the BAV contained in it and the possibility of using it for various purposes.
The composition of amaranth oil contains: vitamin E (tocopherol), vitamin F, squalene, phytosterols, polyunsaturated fatty acids. The oil is used for various disorders of the immune system and metabolic processes. The content of vitamin E, vitamin K, squalene and tocopherol is significantly higher than in sea buckthorn oil. The main components of amaranth are linoleic and linolenic acids – essential fatty acids. They are especially important for the body because they ensure the biosynthesis of lipids. They are united under the general name vitamin F, while linoleic acid (Omega 6) is not synthesized in the body and must be regularly supplied from the outside through food. If an insufficient amount is received, a number of synthesis reactions are disrupted, as a result of which disorders in cholesterol and fat metabolism occur, atherosclerosis processes and other disorders are activated.

Squalene is an important ingredient in amaranth oil. In different varieties it is contained in not very large quantities (parts of a percent), but in some cases it reaches 10%, the highest content among all plant species.
What is squalene? It comes from the word Squalus and is contained in the liver of sharks (discovered in 1916). There are no malignant formations in these sharks. It has now been established that squalene is contained in human fat, animal fat, yeast and vegetable oils; one of the components of human skin. When squalene conversion processes are disturbed, atherosclerosis occurs. It is contained in subcutaneous fat (up to 15%) and is compatible with the skin. It is a special antioxidant that provides full protection for the skin. The amount of squalene in human skin decreases with age.
Sterols – are necessary for the synthesis of androgens and estrogens, i.e. sex hormones, adrenal hormones, vitamin D and bile acids.
Cholesterol and phytosterol are important components of the cell membrane; together with phospholipids, they ensure the permeability of cell membranes and ensure full metabolism, ensure the interaction of phospholipid components in the membrane.
Phytosterols – their content in amaranth oil is 3-4 times higher than in other vegetable oils (e.g. corn). They are similar in structure and function to cholesterol; they block the absorption of cholesterol in the gastrointestinal tract and thus lower the level of cholesterol in the blood. Researchers note the benefits of phytosterols in ordinary nutrition and therapeutic nutrition. If the daily portion is enriched with phytosterols – 2-3 g per day –, the cholesterol in the blood is reduced by 10%.
Tocopherols – these are high-molecular cyclic alcohols; they have α and β varieties. They have strong antioxidant properties and minimal biological activity.
Vitamin F is a very important element that participates in protein synthesis, is important for cell respiration and other processes of cellular metabolism. This vitamin is in the group of immunomodulators, which ensure the full function of spermatogenesis and protect against damage to the embryo, ensure rapid skin recovery, for example, in dermatitis, trophic ulcers, psoriasis, and many others.
The biological activity of tocopherols depends on the % ratio of different fractions, which have different properties. Studies have proven the high effectiveness of amaranth oil in dietary hypolipidemic therapy. Studies have proven that linoleic and linolenic acids together with prostaglandins increase capillary permeability, have a bronchodilator effect on the mucous membranes of the upper respiratory tract.
